Spicy chickpeas

Even though I like nutritious food, I don’t really like to cook :|. The good news is that healthy food doesn’t have to be complicated.

I’ve already written about my favorite summer lunch and my favorite summer dinner, now it’s turn for Oliver’s favorite summer lunch – spicy chickpeas.

It doesn’t look very elegant, but it tastes great. Other than pasta with ketchup (:|), it’s the most frequently requested meal by my 3-year old.

So what’s in it?

Spicy chickpeas

1 can of chickpeas (drained and rinsed)

3/4 can of crushed tomatoes

2 large cubes of frozen spinach (I make my own)

As much as you want of the following:

-chilli powder

-tumeric

-cumin

-coriander

-sea salt

Cook all ingredients for a couple of minutes and serve with plain yogurt.

 

And eat!
